Rice with prawns and clams

INGREDIENTS:

  • Integral rice
  • red and green peppers
  • garlic
  • Parsley
  • Black pepper
  • Saffron
  • Salt
  • Extra Virgin Olive Oil
  • Prawns
  • clams

ELABORATION:

  1. Pour oil into a frying pan or paellera and fry the very finely chopped green and red peppers. Once done, add the crushed garlic and let it cook
  2. Once the vegetables are browned, add the rice and give it a few turns, so that it is well impregnated
  3. Add the prawns. When they are pink, take them out and add water or vegetable or fish broth
  4. Pour the broth from the clams that you have previously cooked in water to make sure that they do not release sand, so the rice does not get dirty. Strain the broth very well.
  5. The clams and the prawns are almost done, add them 3 minutes before the rice is done
  6. Once the broth has been added, add the spices and cover the container so that it cooks over a very low heat
  7. Serve to your liking ( I always finish adding my touch, a little bit of raw oil where I have macerated some garlic and parsley that gives it a special touch )
