Rib with vegetables and potato

INGREDIENTS: (2 people)

  • 2 small potatoes
  • 4 artichokes
  • 1/4 red bell pepper
  • 1/4 green bell pepper
  • 1/4 onion
  • 1 teaspoon of oil
  • 2 garlic cloves
  • 360 gr. rib
  • 200 ml. vegetable broth
  • Salt to taste
  • 4 mint leaves
  • pepper to taste


ELABORATION:

  1. Make a sauce with the peppers, onion and garlic
  2. When the sauce is done, place it in the pressure cooker with the ribs, potatoes and artichokes.
  3. Season with salt, pepper and minced mint
  4. Pour in the 200 ml of vegetable broth or water
  5. Cover the pot and put on the fire
  6. When the valve has risen, leave it for 5 minutes, turn it off and let it finish cooking with the residual heat
  7. If the rib is very fat and lean, it will not be finished. If so, 10 minutes in the air fryer at 180° and return to the pot
