Stuffed moon zucchini

INGREDIENTS: (4 people)
  • 4 moon zucchini
  • red and green pepper
  • 1 leek or onion
  • 2 carrots
  • 8 mushrooms
  • some minced meat
  • 1 level tablespoon of whole wheat or oat flour
  • Half a glass of skimmed milk
  • a pinch of salt
  • freshly ground black pepper
  • light grated cheese
  • Extra virgin olive oil


ELABORATION:

  1. We wash the zucchini, cut off the top.
  2. We put on a plate, also the upper part, cover very well with plastic wrap and cook in the microwave at maximum power for about 12 minutes.
  3. Remove and leave for a few minutes, carefully remove the plastic wrap, be careful as all the steam will come out and you can burn yourself.
  4. With a spoon we extract all the meat, leaving the skin. We put the empty zucchini in a baking dish and reserve.
  5. In a frying pan or saucepan we put a little extra virgin olive oil and poach the chopped leek, or onion, green and red pepper
  6. Add the chopped carrot and cook.
  7. Add the chopped mushrooms and finally the pumpkin meat.
  8. A little of the oatmeal is mixed and when it is a little done we add the milk and bind the sauce, all together. And we season
  9. Fill the moon zucchini with this mixture.
  10. Sprinkle a little grated cheese on top and grill on the gratin
