Homemade pickled mussels and zucchini spaghetti

INGREDIENTS:
  • 1 kg of steamed mussels
  • 4 tablespoons of olive oil
  • 3 tablespoons of vinegar
  • 3 garlic cloves
  • 2 bay leaves
  • 1 teaspoon peppercorns
  • 1 heaped teaspoon sweet paprika
  • 1 teaspoon of hot paprika
  • Salt (optional)

ELABORATION:
  1. - Steam the mussels and remove the shells.
  2. - We let them rest in the cooking water until the next day so that they hydrate well.
  3. - In a saucepan put the oil
  4. - Add the sliced garlic and fry them - When they are golden add the peppercorns, the bay leaf and remove it from the heat.
  5. - I have not put salt on them because I already did it when steaming them, but if you like you can add a pinch.
  6. - Add the sweet and spicy paprika, give it a few turns and add the vinegar.
  7. - We mix everything well and add the mussels.
  8. - We let them rest for at least 24 hours before eating them.
  9. - They keep several days in the refrigerator
  10. As an accompaniment, zucchini spaghetti sauteed with a little garlic and that's it
