INGREDIENTS
- 1 fat egg and two whites
- 1 bag of fresh spinach of 400 grams
- 1 small envelope of smoked salmon
- a bit of lettuce
- 1 pickle
- a bit of goat cheese
- spices
- A spray of olive oil
- Three or four prawns
- Cherry tomatoes to garnish
- Lemon
- Salt and garlic macerated in oil
- Dill for smoked salmon
ELABORATION
- With the garlic and parsley marinade in oil (it can be done directly with oil), add a bit to a frying pan and when it is hot add the spinach with a pinch of salt. Let them cook over low heat.
- When they are almost done season with black pepper (or the spice that you like) and let them be very dry (without any broth)
- Then beat the whites almost until stiff and then add the whole egg and continue beating until everything is incorporated.
- Mix the spinach with the egg carefully and place half in a square grill pan and cover the tortilla with a lid. The salt to the egg that I forget.
- I don't turn it around. Where I am interested in how aesthetically golden the part that is going to be seen is possible. The other one with which it is curdled is worth it.
- I take it out to a large plate and let it cool.
- While making a salad with very chopped lettuce and very chopped gherkins too.
- Season with oil and lemon.
- After that, add the well-drained salad on top of the tortilla, distributing it well. Save the broth to put the tomatoes in the dressing and give it a special flavor.
- Now it's time to distribute the smoked salmon in the tortilla. Try to see how it would suit you best.
- Then cut the curly goat cheese into very thin slices. Do what you can, it starts a little bad. But distribute it as you can that looks good.
- The most difficult moment arrives. You grab a side and start to fold. Good tight but without breaking. Once you have the roll made you have to put it in aluminum foil well rolled and in the fridge.
- Then it's just cold cut and garnish to your liking.
You can make another filling of cooked turkey breast and sliced goat cheese, thus changing the salmon
