Tortilla and zucchini rolls

INGREDIENTS: (for two people)
  • 3 eggs (I use large)
  • Eatlean Low Calorie Cream Cheese Spread
  • 1 tablespoon oat flour
  • Two teaspoons of evaporated milk
  • zucchini sliced very thin
  • Olive oil
  • salt and black pepper

For the filling :
  • Slices of good cooked ham, chicken or turkey and sliced Mozzarella cheese
  • Ricotta Cheese Spread

PREPARATION:
  1. Beat the eggs in the blender glass with the salt, pepper, evaporated milk and grated zucchini
  2. Cut the zucchini into very thin slices (better with a mandolin). I have put 12 slices per Crepe. For vegetables that don't miss!!
  3. In a frying pan with a bottom of oil we are putting a little egg mixture (just enough to cover the bottom) and we put the thin slices of zucchini on top (I did it a little first in the microwave). We curdle a pancake on both sides, like a crepe.
  4. Spread the surface of the crepes with Eatlean spreadable cheese. We put slices of Eatlean cheese and ham, turkey, chicken... to your liking and roll up like a Swiss roll, pressing well.
  5. Served hot or cold whole or sliced for party appetizers.

TIPS AND COMMENTS
For this type of recipe, the olive oil sprays that are sold in the market are perfect. The tortilla is made evenly and does not stick.
You can make small, individual tortillas and serve one per guest.
And to make it a complete dish, it is accompanied by a good salad.
