Vegetable soup with prawns

INGREDIENTS:

  • 150 grams of broccoli, carrot and cauliflower
  • 4 prawns
  • 1 small potato 60 grams
  • 100 ml of fish broth
  • 7 ml of extra virgin olive oil
  • 3 grams dill powder
  • Salt to taste
  • 2 garlic cloves
  • pepper to taste

ELABORATION:

  1. In a little good oil, fry the garlic with the chopped potato and the 4 prawns.
  2. When the latter are slightly golden, they are removed and reserved.
  3. Add the fish broth (or water) and season with salt and pepper.
  4. Add the chopped carrot and let it cook for 5 minutes and then the broccoli and cauliflower together with the prawns and about three more minutes.
  5. Garnish with dill to taste
