INGREDIENTS:
- 2 large boiled potatoes
- 3 garlic cloves, minced
- chopped parsley, to taste
- touch of black pepper
- 45 gr of rice flour,
- 1 small egg
- 2 tablespoons EVOO
- Grated cheese, to taste (I put a lot hahahaha)
ELABORATION:
- Put a nonstick skillet on the fire. Put the potatoes, skinless and already cooked, in a bowl. (If you don't have them ready, you can make them in 5' in the microwave. Cover them with plastic wrap and microwave!)
- Add the rest of the ingredients, except the cheese, and knead with your hands until all are integrated. Add the cheese.
- Take portions of dough and shape them into a hamburger.
- Spray the pan with a little EVOO and add the potato cakes and cook them for 2 minutes on each side.
NOTE: RICE FLOUR IS NECESSARY IN THIS RECIPE
