Potato cakes stuffed with cheese

INGREDIENTS:

  • 2 large boiled potatoes
  • 3 garlic cloves, minced
  • chopped parsley, to taste
  • touch of black pepper
  • 45 gr of rice flour,
  • 1 small egg
  • 2 tablespoons EVOO
  • Grated cheese, to taste (I put a lot hahahaha)

ELABORATION:

  1. Put a nonstick skillet on the fire. Put the potatoes, skinless and already cooked, in a bowl. (If you don't have them ready, you can make them in 5' in the microwave. Cover them with plastic wrap and microwave!)
  2. Add the rest of the ingredients, except the cheese, and knead with your hands until all are integrated. Add the cheese.
  3. Take portions of dough and shape them into a hamburger.
  4. Spray the pan with a little EVOO and add the potato cakes and cook them for 2 minutes on each side.

NOTE: RICE FLOUR IS NECESSARY IN THIS RECIPE
